We were blabbing about food as usual in the chat room today, making everyone drool...

I figured I'd post my Chili Recipe for all to see... Hopefully some of the other people can share theirs too. Enjoy! :D

Ingredients:
1 lb ground beef (lean)
1 lb turkey sausage
1 green pepper
1 onion
Bottle of Red Wine (Merlot)
6-8 cloves of garlic
2 tbls Brown Sugar
2 tbls Chili Powder
2 tbls Ground Cumin
1 tsp Oregano
1 tsp Basil
3-4 dried Bay Leaves
2 Big Cans of diced tomatoes
2 cans of kidney beans
1 small can of tomato paste
(if you like heat – use Jalapeño / Habenero peppers as well as green peppers)

Directions:
1) Cook Meat, chopped onions, garlic and chopped green peppers until the meat is brown.
2) Add tomato paste + spices (except Bay Leaves) – cook for 5-10 minutes
3) Add wine + reduce about half
4) Add all remaining ingredients
5) Bring to Boil and then reduce heat to simmer
6) Simmer for 45-75 minutes

Nice recipe. I've never tried using red wine in chilli. I'll have to give that a try. I usually use some chicken or beef broth (don't need to add salt later) and pour in a dark beer. One other trick I use when making chilli is that I cook some bacon in the pot first, remove the cooked bacon, and then brown my meat in the bacon grease. I find it gives the meat a great flavor, plus free bacon.
